I used standard 10"x 12" glass pieces from HD for my refugium... the 8"x 10" will fit the 10 gallon, you may have to do a cut or two by yourself which is pretty easy with a simple $2 tool also available at home depot. Just a suggestion.
There will always be some waste from any animal...they all have to poop, you know? But if you have enough current in the tank, the detritus should be stirred up enough to be removed from the tank by your filtration.

Welcome...and like tim said, dont do a water change until after the cycle.
I have to suggest, though, that if you arent going to have a skimmer, you should practice largerer water changes...say 50% or so. I myself have a skimmer and I still do 50% water changes... I have a 20g display tank...

There are actually timed when certain filter medias can lead to higher nitrates...those are inproperly maintained filter floss, and things like the above mentioned "biological" medias. LR has the advantage over these medias in that it supports...

Nitrates are almost undetectable, even by the LFS. This is the tank that I transferred eveything into from my 16 gallon on March 1 (I believe). The rock and sand was in my 16 gallon for over 2.5 years prior to this tank.
Nitrites and ammonia are 0, pH right around 8.0, specific gravity...

I would start doing 30%-40% water changes once a week as opposed to only 15%....that small of a water change doesnt have enough of an effect on nitrates, or anything else for that matter.
Make sure to be cleaning the mechanical media in the canister (if you will have any) once a week or more...
Actually your nitrates are likely causing some problems...20 ppm is pretty high. When was your last water change, how big was it, and do you have any mechanical filtration media?

I am a big Zoa fan, but I am fortunate enough to see frags like that all the time at my LFS.

Looks good but two things:
1: Be careful about having too Little flow through the fuge...think about what kinda algaes grow at low flow (i.e. cyano or red slime).
2: That is a TINY return area... make sure you have an automatic top-off to keep the pump from running dry and burning up...
