I've decided I need at least one more sizable (not super big or anything but not tiny) piece of LR for the tank but now that my tank is almost cycled I want to know what I need to worry about when adding additional LR. Will it increase my nitrates again or start another cycle? Right now I have mostly Fiji with 2 pieces of Tonga...is it good/bad to get a different type of LR? Any advice?

Mixing different types of LR is fine and is up to the individual that is aquascaping the tank. You can add alot of interest to a tank by using rock from different areas. You will cause a cycle by adding the LR but the condition of the rock will dictate just how much of a cycle. If the LR is fully cured you probably won't see much of a cycle at all, most people call this a minicycle. If the LR is fairly raw and uncured then a much longer cycle will follow.
